First off to you have to rdp or console on the box that you want to change.
The way to change default data and log places is to login to Managment studio right clickthe server in question. Go to Properties. Then go to Database Setting on the left. Then you will see Data and Log. Click the repsective box to the right and highlight the folder where you want each to be. Then click ok.
